When you fancy a delicious cookie to have with your coffee, look no further than this!  These are so easy to make, packed full of nutritious whole food ingredients including our Meraki Cacao Inca bars.

Free from dairy, gluten, oil and refined sugar, these cookies not only taste amazing they’ll give you a sustained energy boost and keep you going til meal times.  Or have them for breakfast if you fancy!  With a few pantry ingredients you can create a healthy treat, one that will nourish your body and soul.

RECIPE

1 cup of ground almonds or almond flour

1 cup of rolled oats

1/2 cup of ground flax seed

1/2 cup of raisins/sultanas or dates

1/2 cup of your favourite nut or seed butter

1/4 cup of Suga Vida (Palmyra blossom nectar)

1 cup of unsweetened plant milk 

1 1/2 Meraki Cacao Inca bars chopped

1/2 cup of chopped almonds, pecans, walnuts, hazelnuts or sunflower/pumpkin seeds

1 tablespoon vanilla essence

pinch of salt

METHOD

Preheat oven to 180 degrees C and line a baking tray with baking paper

Put the almond flour, oats, raisins, nut butter and SugaVida into a food processor.  Process until mixture resembles fine breadcrumbs

Place mixture in a mixing bowl and add the milk, chopped nuts, chopped cacao bar, vanilla essence and salt ad mix well until combined

Wet hands and place a spoonful of mixture into your hands and roll into a ball.  Make 12 even sized balls and place evenly along the baking tray.  

Flatten the balls with your hands, or the back of a spoon or bottom of a glass

Bake in the oven for 20 mins or until golden brown.

Place on a wire rack to cool
