We fancied a cookie this afternoon with our cuppa and searched for a healthier cookie recipe. We were inspired by the gorgeous cookie recipe on the Deliciously Ella website. You can use any flour and any of our Meraki Cacao bars. The cookies are so yummy and easy to do. They were perfect for our afternoon pick me up.
Recipe for 6 cookies
25g coconut oil – melted and cooled to room temperature
40g SugaVida (or use coconut sugar)
100g plain flour (we used a gluten free flour)
1 teaspoon baking powder (we used gluten free)
35ml of any plant milk (we used Koko sugar free coconut milk)
1 bar of Meraki Cacao (we used Moroccan mint) – chopped
Pinch of salt
- Preheat the oven to 190 degrees centigrade
- Line a baking tray with baking paper
- Mix the dry ingredients in a bowl
- Add the wet ingredients and mix well – use your hand
- Add the chopped Meraki Cacao bar
- Mix well with hands
- Form mixture into six balls
- Space evenly on tray and press down slightly
- Bake for 10 minutes
- Cool on wire tray
- Enjoy
